We were having a friend over for dinner – Enchiladas have been one of my go-to meals for a long time now and since I’ve been wanting to try the gluten free tortilla shells anyways, I thought I’d stick with the usual 🙂 I made the entire pan as normal except I used the gluten free tortilla shells for 3 of the enchiladas. The verdict? The taste was great – honestly I couldn’t tell a difference between these and whole…
So what do you do for Thanksgiving Dinner when you are on the road? We weren’t sure either…and clearly underestimated how much of a stand-still the United States comes to on this holiday. We arrived in Roseville around 8pm, and proceeded to look for dinner first before checking into our hotel. Thank goodness we did or we may have starved to death. Literally. NOTHING WAS OPEN! Seriously….dark lights everywhere…no cars to be seen. Until… CARROWS! We really lucked out here…
The boys were in love. We made a habit of googling fun and kid friendly things to do each night in the hotel, in preparation of our next day travels. It’s really a handy little tool to be honest, and it helped us find a lot of great things to do with the kids. We really did spend a good portion of our holiday in the vehicle, so we tried to maximize on as much outside time as possible. On…
It’s a tradition in my family for the aunties to write a song for every major occasion. It is always the highlight of the event and something we all look forward to. You might remember the post I shared with the video of them singing to my Uncle Bob – it was initially written when they visited him in the hospital, and then added to for Christmas when they all got to be together to celebrate. There is truly never…
As mentioned in my last post, I achieved my goal of not just wearing a bikini on holiday, but feeling comfortable in it. I felt comfortable to begin with, but what was so awesome to realize once we got to our resort was that NOBODY CARES!!!! There are all body types in one pieces, bikinis, tankinis, and speedos….and everyone is there to enjoy themselves…nobody cares! And for once in my life I didn’t either. I haven’t worn a bikini since…
Well – somewhere along the way I got my photos and dates mixed up….I posted that we had a beach day in Monterey – and we didn’t…it was here in Santa Cruz! LOL So here’s the link to that post – it really was an awesome day. But one of the things I really loved was the Boardwalk behind us. Everything was closed of course (too cold…not summer) but it was so neat to see..It reminded me of the fairs/amusement…
After we bid farewell to the fabulous Dennis the Menace Playground we made our way to Marina. Our initial plan was to head to Santa Cruz but a booking issue landed our hotel in Marina. It wasn’t too far away so we decided to embrace it and take it as the way things were meant to go. We stayed one night at the Marina Ramada Hotel that we booked through Hotwire. The hotel was nice and clean and provided a…
Have I mentioned already that California knows how to do parks? Well this just confirmed my already high opinion… I don’t know about you, but I grew up watching Dennis the Menace. Finding humour in the pesky stunts he pulled to annoy his neighbour Mr. Wilson. Now that I’m a parent (of a 3 1/2 year old boy no less) I can’t say I’d find it quite as humorous. Buuuut, should you have a child who has a bit more…
We had so much fun walking along The Boardwalk in Monterey! Seeing the palm trees swaying in the light breeze next to the palm trees did my heart good. Being so close to the water was so relaxing….the warmth of the day (for us Canadians anyways) made the day perfect and gave it that true *vacation* feeling. We saw a really fancy hotel that we just HAD to stop and check out. We gave our kids the appropriate *best behavior*…
