Hamburger Vegetable Soup *Hearty and Delicious*

I love making soup, well any time, but particularly in the winter. I love being able to feed Brent a nice warm, hearty meal after a long day of work. Not wanting to revert back to our *Taco Soup* staple or just wing it (though I have no doubt I could do it), I set to work online to find a delicious new recipe to try.

I’m sure you’ve all probably guessed the first place I checked was All Recipes….it’s no secret it’s typically the place I check for ideas – and this time was no different. Immediately several different recipes popped up, making it a bit of a tricky decision. One thing I was looking for (as always) is a recipe using ingredients I already had on hand (I am out of stewed tomatoes so wanted to make sure the recipe didn’t have that as a main ingredient) as well as looking at the number of reviews and ratings.

I found the following recipe – and you know, it was absolutely delicious. I put some alphabet pasta in instead of elbow macaroni, though I really wanted to use barley but couldn’t find ours ūüôĀ

Hamburger Vegetable Soup

  • 1 pound ground beef
  • 4 cups chicken broth
  • 4 cups water
  • 2 (1 ounce) packages dry onion soup mix
  • 1 (15 ounce) can tomato sauce
  • 2 stalks celery, chopped
  • 1 onion, chopped
  • 1 (16 ounce) package frozen mixed vegetables
  • 3/4 cup elbow macaroni
  • I also added some pepper to taste just because I like it.
  1. In a saute pan, brown ground beef, over medium heat.
  2. In a large stock pot, combine all other ingredients, including cooked ground beef (unless you prefer to add it at the end…I like to add it to mix all the flavours as much as possible). Bring to a boil and then simmer until macaroni is done.

I don’t what all did it, but this soup was seriously delicious and is HIGH on our *make again* list. I served it with some baked sandwiches (ham and salami with swiss cheese) and it made for a really great, hearty, and super yummy meal. This would be the perfect way to end¬† a day on the slopes, or out tobogganing with the kids. Or just a day when you don’t really want to put a lot of effort into cooking (great Crock Pot meal!!!).

**Make this soup Gluten Free by eliminating pasta and/or barley, or adding gluten free pasta instead.**
