Pumpkin Squares…to Cake Pops! #cakepops

Every year around this time my sister in law {over}fills out tummies with her incredibly delicious Pumpkin Squares….of course the cream cheese icing doesn’t hurt either. It’s all so delicious. But since I’ve gotten my cake pop maker I’ve been trying to perfect them and have been making them like crazy! I had the great idea to try the pumpkin squares as cake balls….and guess what, it worked!!! So delicious 🙂

Here is the recipe:

Beat Together:

4 eggs

1 2/3 cup sugar

1 cup oil

2 cups pumpkin pie filling

Mix and add:

2 cups flour

1 tsp baking soda

1 tsp baking powder

2 tsp cinnamon

Bake 25 minutes at 350 in large baking sheet. But as mentioned – I used the batter for my cake pop maker and it worked brilliantly (though they do take a couple minutes longer to cook than regular cake batter).

They don't need sprinkles...just wanted to make them festive.

Cream Cheese Icing (warm in microwave to thin prior to dipping cake balls):

1/2 cup softened margarine

4 oz cream cheese

2 cups icing sugar

1 tsp vanilla
