Homemade Spaghetti Sauce

As mentioned in my previous post, I’m trying to do just one weekly grocery trip and pretty much use what we have. I wasn’t as organized this week as I was last so have had to improvise a little more. Last night I really wanted to do spaghetti but didn’t have any spaghetti sauce on hand. What I did have were two large cans of Diced tomatoes (one can was whole but it wouldn’t make a difference).

I blended up the Tomatoes with two large cloves of garlic and pour them in a pot, cooking on medium heat. I added (sorry there are no measurements it really was just an eyeball sort of thing) the following ingredients:

Parmesan

Italian Seasoning

Pepper

Garlic Powder

Garlic Salt (for no other reason than I saw it and thought *why not* lol – but seriously only a smidge)

Chili Sauce

1 onion, diced

And I had some leftover Enchilada mix that I added as well. Taco meat would work also…or nothing. You could also add diced celery, peppers, zucchini, mushrooms, etc if you wanted more veggies 🙂

I was surprised at how good it tasted – I don’t like tomatoes so I wanted to make sure it wasn’t too *tomatoey*.  And it wasn’t….it was soooo good – thank goodness too because it made a TON!  🙂
