One of my all time favorite *eat out* meals is the Chicken Lettuce Wraps from Joey Restaurants. They are so delicious and always hit the spot. I don’t live near one so don’t get them often, but trust me when I say it’s one of the first things I plan for when my travels take me nearby. I LOVE THEM!
Recently a friend of mine posted a photo of some lettuce wraps her friend had made…and she claimed they were incredibly similar to the ones at Joey. I HAD to try them.
Guess what was on the menu for dinner tonight! Using the recipe from my friend (using just Hoisin for the sauce) combined with the one I found on Food.com I made us some incredible lettuce wraps that were every bit as delicious as the ones from Joey. Here is what I did:
Finely chop:
1 green pepper
1 red pepper
1 small white onion
2 green onion stalks
4 mushrooms
2 cloves of garlic
water chestnuts (about half a small can)
1. I sauteed the peppers first, then added the water chestnuts, mushrooms, garlic, and onions.
2. Cut the chicken into small cubes (I actually bought the precooked thai flavour pack of chicken from walmart for $5 instead of making it from scratch) and add to mixture.
3. I also grated half a carrot and added it in.
For the sauce:
4 Tbsp Soy Sauce
6 Tbsp Hoisin Sauce
1 tsp Brown Sugar
1/2 Tbsp Chili Sauce (I have M&M Meat Shops Sweet Thai Sauce)
(and I made another half recipe of the sauce to add to each lettuce wrap as I made them)
**You can also add Coriander or Cilantro, but neither appeals to me (I despite Cilantro) so they were omitted**
Pour Sauce over chicken and veggie mixture, adding 1/4 cup of peanuts and cook for an additional 5 minutes or so 🙂
Before serving, add Chinese noodles (I used skinny Chow Mein noodles).
Wrap in Iceberg lettuce and ENJOY! (No seriously, ENJOY!!!)
My husband, who is not normally a fan of Hoisin sauce (why I looked online for another sauce recipe), LOVED them. And I am currently fighting the urge to raid the fridge for the leftovers…a perfect late night snack *must resist* lol.
