Meatballs

I’m really trying to plan our meals ahead of time, or at least avoid any repeat grocery trips during the week. So I’m having to make sure to use everything I have on hand. Last week I had lots planned (roast, ham, and chicken), but this week has been a little less organized. I made Enchiladas on Saturday, spaghetti last night (had to make homemade spaghetti sauce because I didn’t have any…recipe to come), and tonight I thought I’d make some meatballs. It’s been a while and they sounded pretty yummy.

I headed to Allrecipes and looked through a couple recipes. I actually combined two different recipes and they turned out soooo good!

First – Meatball Nirvana

1 lb ground beef

1 small onion, diced

1/2 tsp sea salt

1/2 tsp garlic salt

1 1/2 tsp italian seasoning

3/4 tsp oregano

3/4 tsp red pepper flakes

dash hot sauce (frank’s, tabasco, etc.)

1 1/2 Tbsp worcestershire

1/3 cup skim milk

1/4 parmesan cheese

1/2 cup bread crumbs (I used gluten free)

Mix well and roll into 1- 1 1/2″ meatballs and cook on 400 for 20-25 minutes.

Then I used the Cocktail Meatball III Recipe for the sauce:

1 bottle of ketchup

1 cup brown sugar

2 Tbsp worcestershire

**I also added some chili sauce and more brown sugar and worcestershire to taste. I had some leftover pineapple chunks in juice in the fridge and threw that in too just to use it up**

I served over plain rice and it was soooo yummy! These meatballs stayed together so well (never happens to me) and were absolutely delicious!
