Scalloped Potatoes and Onions

One of my husband’s favorite side dishes is Scalloped Potatoes, but can you believe that in 9 years of marriage I have NEVER made them? I know, shame on me. So finally I decided that I needed to try them out – naturally I went to allrecipes to find one that suited me. I was a little worried at first with the sauce mix (just because I haven’t made them before), but once they were done my husband gave them thumbs up. Our company did as well – and after we ate there was only enough for one more helping left. DELISH!

  • 5 large potatoes, peeled and thinly sliced (I used probably double this)
  • 3/4 cup chopped onion (I like them diced)
  • 3 tablespoons butter or margarine
  • 1/4 cup all-purpose flour
  • 1 3/4 cups chicken broth
  • 2 tablespoons mayonnaise
  • 3/4 teaspoon salt
  • 1/8 teaspoon pepper
  • Paprika

In a saucepan melt the butter. Mix in flour (I use a whisk) and chicken broth (slowly). Add Mayonnaise, salt, and pepper and cook until bubbly and thick (keep stirring). In a casserole dish layer sliced potatoes and diced onions. Sprinkle top with paprika.

I also added cheese because cheese makes everything good. I put about 1/2 cup shredded cheddar into the sauce, and sprinkled about 1/4 cup in between two of the layers. AND (I know….I’m a cheese addict, remember) after baking in the oven for 2 hours at 350, I topped with cheese and broiled.
