My kids LOVE when I make this for lunch or dinner. It’s quick and easy, and although it has a creamy sauce, I like to think it’s still a bit healthy. LOL
1 cup mayonnaise
1/4 cup sugar
4 tsp vinegar
1/2 tsp dill
1/2 tsp seasoning salt
Keep the dressing separate and add it to the cut up cucumbers in a separate bowl. The dressing keeps better if stored separately – otherwise the cucumbers get kinda mushy (overnight).
I usually half this recipe for one cucumber. It really is so delicious and a great and quick way to add a side dish to any meal!
